Is this a delicious pasta salad?
Can artichoke hearts, leaves or hearts peeled sliced up small can of sliced black olives Pearl Baby bellas (crimini) mushrooms into thick slices A perfect tomato diced organic Pesto Feta cheese mozzarella cheese Lime juice Salt Blackpepper Sautee mushrooms curly noodles with lots of margarine or butter and garlic Cook the noodles are tender and drain. Leave to cool. Mix a few tablespoons of juice from the can of artichokes, olive juice, lime juice and 1 / 4 cup of pesto. Mix up in a dish and pour over the cooled pasta. then add the feta, mozzarella, artichokes, tomatoes, olives and mushrooms. Season with salt and pepper and mix well. Chill, enjoy! I forgot the spinach! Chop the spinach and saute mushrooms
It sounds nice but a little on the salty side. Olives, feta, mozzarella, salt …….. you may want to reduce salt, and mozzarella seems a bit exaggerated over cheese. I am a bit worried that the spinach would give it a bitter note.
